(Easy) Tasty Gluten Free Desserts

Tummy Boy sure has a sweet tooth! When I can pull him away from his bag of Reese’s Peanut Butter Cups, we enjoy these delicious desserts. They’re soo easy!

Warm Apple Donut Delight

Ingredients:
Kinnikinnick Cinnamon Sugar Donuts
Musselman’s Chunky Home-style Apple Sauce
Vanilla Ice cream

Directions:
Heat up the cinnamon donut in a paper towel for a few seconds in the microwave until warm. Spoon out some apple sauce into a small bowl to also microwave for a few seconds. Place the donut on your plate, and then spoon some warm chunky applesauce into the donut’s hole. Top with a scoop of vanilla ice cream.

Ingredients:
9 Cups Rice Chex (Gluten Free)
1 Cup Semi-sweet Chocolate Chips (Gluten-Free Girlfriend’s note: We use Nestle morsels)
½ Cup Peanut Butter
¼ Cup Butter or Margarine
1 Teaspoon Vanilla
1 ½ Cups Powdered Sugar

Directions:
1) Into large bowl, measure cereal; set aside.
2) In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3) Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

Broiled Grapefruit
We made this last night for a lighter tasting dessert.

Ingredients:
1 large grapefruit
1 Tablespoon Butter or Margarine
2 Tablespoons Brown Sugar

Directions:
Cut the grapefruit in half. A grapefruit has sections like an orange, so don’t cut it so you can get apart individual sections (vertical), cut it horizontal instead. Cut a bit of rind off each end so that the grapefruit half can sit easily on the baking tray without wobbling. Section off each bite of grapefruit by running a knife around each individual section. Place ½ tbsp. of butter or margarine and 1 tbsp. of brown sugar on top of the grapefruit half. Place the grapefruit halves on a baking tray in the oven (set to broil). When the butter is melted the grapefruit is done!
